Farmers Cheese Patties (Ukrainian traditional sirniki)



Farmer's Cheese Patties (Ukrainian traditional sirniki)
Serve 4


1/4 cup brandy (might be substituted on juice), 1/3 cup raisins, 1 pound farmer's cheese, 2 large egg yolks, beaten, 1 1/2 tablespoon sour cream, 1/2 cup all-purpose flour, 2 tablespoons uncooked cream of wheat (farina, not instant), 3 tablespoons sugar, 1/2 medium size banana (optional), 1/2 teaspoon baking soda, 1/4 teaspoon salt, 4 tablespoon unsalted butter (for frying)


In a small saucepan, bring the brandy to a boil. Off the heat, add raisins and soak for 30 minutes. Drain and dry with paper towels. Set aside.


Combine farmer's cheese in a large bowl with the raisins, egg yolks, sour cream, flour, and baking soda, cream of wheat, banana, and sugar. Mix thoroughly and add salt. Cover and refrigerate for 1-2 hours.


Form the cheese mixture into 12 round flat patties about 3 1/2 inches in diameter. Dust patties on both sides with the 1 tablespoon flour.


Melt the butter in a large nonstick skillet over medium heat. Add as many patties as will comfortable fit and fry until deep golden on both sides. Repeat with the remaining patties. Serve at once.
