Pink herring salad
It's a traditional and very homy salad.
4 small beets, cooked, peeled and diced
1 cup jar pickled herring, drained and cut up
4 medium size potatoes, cooked, peeled and diced
1/2 medium red onion, diced
2 medium size carrots, cooked, peeled and diced
2 hard boiled eggs, diced
2 tablespoons sour cream
2 tablespoons mayonnaise
salt, pepper to taste
In a large bowl mix all ingredients together. Add salt and pepper to taste. Marinate overnight.
