Quick Snack Apple Cake


6-8 servings.
1 stick (8 tablespoons) unsalted butter, 1 cup all-purpose flour, 2 large eggs, 1 cup sugar, 3 medium size apples, 2 teaspoon baking powde, 1/2 cup milk (room temperature).


Preheat oven to 375 degrees. Line an 8-inch squire pan with foil, then grease with thick layer of butter. Dust with flour and tap lightly to remove excess.


Melt butter in a small saucepan. Set aside. Beat together eggs and half the sugar to blend. Continue to beat while slowly adding remaining sugar intil mixture is thick and light and forms a ribbon when dropped from a spoon.


Peel, quater and care the apples, then trim ends and slice thin. Stir butter into egg-sugar mixture. Whick the flour and the baking powder, then stir it into the batter alternately with milk. Fold in apples. Pour batter into pan and smooth top.


Bake 25 minutes, then rotate the pan; bake for about 25 minutes, until cake pulls away from pan and is brown on top.


Cool 30 minutes, unmold and dust with confectioners' sugar before serving.
